Dairy Free, Gluten Free, but def not Yum Free

Oh how a muffin that can actually be good for my muffin top! That’s right kids, low cal, low fat, low carb baked goodness.

photo

  • 3 mashed bananas (the more ripe the better)
  • 1 cup vanilla Almond milk (but really any milk would work)
  • 2 eggs (might test run with applesauce to make it vegan as well, but we will see how much free time I have in the next few weeks).
  • 1 tbsp. baking powder
  • 1 tsp. vanilla extract
  • 3 cups or 240 grams oatmeal
  • Optional, but I sprinkled with a little cinnamon (1/2 tsp.) on top before baking.

Preheat oven to 375 degrees. Mix and pour in pre greased muffins tins, bake for about 12 minutes. I mean really just eyeball it when the tops look golden brown, when the fork test passes, you are done. Jess is the baker here, I just straight up wing this kinda stuff. Although my love for food shines through with some of my, toss in suggestions: dark chocolate chips, blueberries, walnuts, etc. SALIVATING, you don’t even know.

Cake Cake Cake

Ok I am not literally going to sing Rihanna’s birthday cake song, well at least not till NEXT WEEK!! That’s right kids…THE BIG DAY is arriving shortly…

Jess & Sonia’s BIRTHDAY!!!
Funny thing is, I don’t even need to say it should be a national holiday, because it is!! I mean sure, its because its also Martin Luther King Jr.’s birthday, but a holiday nonetheless. Plus I mean Drew Brees, QB of the Saints, also has that birthday amongst many others. Bottom line, January 15th equals best day of the year. Birthday or not, you should eat cake on the best day of the year. So here is a cake for all foodies, no funfetti here my pets. This is some grown up ish that is just as easy to whip up! ha that’s funny because the “frosting” is actually whipped cream 🙂
nom nom nom here we go:

  • 1 package of store bought yellow cake mix (I mean if you are like Jess and got a new FANCY Kitchen aid stand mixer for Christmas, feel free to cheat on the short cut and do the whole whipping of butter, sugar, eggs, flour, baking soda gig. However, if you are like the rest of us peasants, just go the “easy” way out).
  • 1 can of cherry pie filling (15 oz.)
  • 1.5 tsp. Almond extract
  • 1 tsp. Vanilla extract
  • 1/4 cup of sliced toasted almonds (listen I did a 1/2 cup like the recipe says, but it was WAY too nutty (even for a nutjob like me). It got in the way of the cake part, but whatever to each his own).
  • 2  eggs
  • a tub of light cool whip

No oil needed, just mix the above & pour. Bake at 350 degrees for 15-20 min (also base the time on what you are baking in. i.e. size of dish, you goobers-check back of cake box to confirm). Let it cool and slather with some whipped cream and maraschino cherries to make it look all gorgina, just like your pretty faces.

Tasty Treat

If you thought the Fall Favorite was easy, you don’t even know what you are getting into with this Pumpkin Dip. There is no cooking required. There are no utensils or dishes required. Yet this is the yummiest snack on the planet! Yup planet, not country, but the whole damn world. I get it, the lamb chops or roast chicken may not be everyone’s cup of tea. However, I know damn well you can make this! Grab the 4 whopping ingredients and get stirring, this tasty treat won’t last long in anyone’s kitchen.

  • One container of Cool Whip (you can get the low fat stuff)
  • One small box of vanilla pudding mix (don’t make it, just the powder)
  • 1 15 oz. can of pumpkin (again not the pie mix, actual pumpkin)
  • One teaspoon of cinnamon
Directions:
  • Combine all ingredients
  • Chill for 30 minutes (throw it in your fridge & pull out as a snack, dessert, etc. whenever, the 30 minutes is more of a suggestion than rule)

Enjoy with:

  • Graham crackers
  • Vanilla wafers (I even crushed some up to decorate the top with)
  • Apples
  • Your fingers, a spoon, I am not kidding. So freaking good. Lick the bowl, good.

Apple Galette

Oh so you bought a pie crust package for that quiche recipe and don’t know what else to do with the other pie shell? Easy! Make an apple galette. What is a galette? Think: mash up of a pie and a tart with less dough. Just fold over the edges of the crust, and there you have it! Also, note this galette can be made with peaches &/or plums if you’re using fresh summer fruits.

Ok so here it is:

  • 3 apples peeled, cored, and sliced (use any kind, but if you insist on being hand held I’d use gala apples)
  • 1tbsp of all-purpose flour
  • 3 tbsp of granulated brown or white sugar (granulated just means not powdered, its the same kind you use in your coffee, relax)
  • 1 tbsp fresh lemon juice (can’t stress enough that quality of ingredients is what makes food go from good to great, use the bottle stuff & you will taste the difference)
  • 2 tsp cinnamon
  • 1 tbsp melted butter (unsalted, duh)
  • 1 pie shell

Preheat your oven to 350 degrees. Take all the ingredients other than the pie shell and mix in a bowl. Lay pie dough on flat sheet pan, pour mixture in center of dough round and fold in the edges of the pie shell. Note the center will remain open, you are not folding or sealing the dough, but merely curling the edges inward (see photo). Bake for 30 minutes or until edges are golden brown, let cool & serve.

Although this is meant to be a dessert, miss bougie would suggest to serve thin slivers of the galette with a cheese platter (inclusive of brie, gorgonzola, goat cheese) as a cocktail hour appetizer.

Brunch AND Dessert?! Say It Isn’t So…

Shout out to Pinterest, where I stole the idea for this from. Not bragging, but I kicked it up a notch or two by making it more flavorful so I am here to share my quickest dessert yet. Oh, and PS, not ONLY is it dessert friendly, but I have most definitely served this for brunch with coffee and a side of bacon or eggs or something else savory. So essentially this is a brunch and dessert recipe that takes literally NO culinary skills at all. And did I mention it takes 4-5 ingredients? So no long grocery list on this one. You literally can recite it!

  • 1 can of crescent rolls (not flavored so don’t go grabbing the garlic butter ones, although they are delish and will be used in a plethora of other recipes for this blog. For now, just grab the plain stuff and heck save a penny or two and buy the generic brand vs. Pillsbury, no one knows or cares)
  • 1 box of blueberries (measuring wise say about 1/2 cup since you won’t use the whole box. Also don’t get crafty and use strawberries, I may or may not have done so and ended up ruining this recipe. Apparently strawberries have too much water content and they turned this recipe into mush! I mean it looked like I vomited on the pan, mush. Maybe raspberries would work, but just follow directions. Don’t be a maverick and just do the blueberries).
  • 1 lemon (Zest only needed, zest means grate peel, not talking down to ya just sayin’).
  • 1 8 oz. package of cream cheese (you can do the block, tub or whipped kind not sure it makes any kind of difference).
  • 3tbsp of Brown sugar or regular sugar (I prefer the brown because of the molasses-like flavor, but regular is totally fine).
  • Pinch of cinnamon to taste (leave out or add an extra pinch based on what makes your toes curl).

Take a bowl add the cream cheese, the zest of half of the lemon (2tsp or so), 3 tablespoons of the sugar, and that pinch or 2 of cinnamon and mix.  Unroll dough into four rectangles, fat ends to each other, skinny ends out. (Think star shape) Firmly press perforations together to seal.  (See picture because I am describing this terribly).

Smooth cream cheese mixture on to center of the star (within 1/2 inch of edges) and top w the blue berries, then bring opposite corners of rectangles together; press together to seal. Place on ungreased baking sheet. Bake at 375 degrees for 11 to 13 minutes and you have a dessert, brunch side, or coffee snack that is home made, that is delish and took only 15 damn minutes.
