Tea Party with the Easter Bunny

So if you are actually more of a grown up than me and maybe wanna swap out these recipes for a bridal or baby shower vs. a make-believe Easter bunny tea party, feel free to. I mean that is OBVIOUSLY not what they are intended for and are strictly meant for large hat, gloves, and pearl wearing occasions such as Easter Sunday. However, I will not judge you for using them for adult events in which Mimosas and Bloody Mary’s are served in place of tea & crumpets. Not that I have any clue what a crumpet is nor will I be showing any of you how to make one. Luckily, a lot of the essentials for this tea party you already have in your arsenal of recipes. Look back at the truffled crostini and the deviled eggs as a good place to start.Then build upon the fine tea party foods by adding the two finger sandwich recipes below:
  • 2 tbsp. butter (unsalted)
  • 1 tbsp. chopped chives
  • 1 cucumber thinly sliced in rounds (word on the street is radishes are a great replacement ,but kids find it spicy so I left it as cucumbers, but a thought if you want to do half & half).
  • salt & pepper to taste
  • 6 slices of bread cut into the same sized rounds as the cucumber (I used a brioche)
Mash together the salt, pepper, chives, & butter. Spread a thin later on the bread and place the cucumber slice on top. Smear the other bread before finishing the sandwiches. Serves enough for you, the Easter Bunny, a doll, and Mr. Teddy Bear. (or 4 adults if again, that’s something you are into, hanging with adults or real people for that matter).
  • 2 tbsp. whipped cream cheese (or crème fraise)
  • 1 tbsp. chopped dill
  • smoked salmon
  • 6 slices of bread cut into squares (I used a pumpernickel since it was darker than the brioche)
  • salt & pepper to taste
  • 6 slices of bread cut into the same sized rounds as the cucumber

*same methodology to “construct” as above.

Finally, offer an assortment of teas. Not just hot, think iced tea as well! Fruit infused or even good old Arnold Palmers. Lastly, some store bought cookies would be a good way to finish off with something sweet. Enjoy a relaxing Sunday afternoon with your dolls & the Easter bunny or bridesmaids, whatever you see fit.

Squash It

I have a fellow foodie that is just my spirit animal when it comes to trying new dishes and eating out together. Not only is she just as adventurous as me, but she is a phenomenal cook. One day when we were discussing different recipes we both came to the conclusion that we are obsessed with autumn vegetables and summer fruits. Those are the best seasons for the respective produce and you should go crazy making dishes that incorporate those seasonal ingredients. Now I know I am a long shot away from Fall, but with the recent flurries we experienced in the Philadelphia area, it sure feels more like autumn than spring. Check out this lovely butternut squash (one of the shining stars of the Fall veggie scene) recipe, it even re-uses the maple syrup you bought for this chicken recipe and the squash from the Fall Stew. Plus, eating it should help me “squash” my feelings of missing Fall. Oh what a wordsmith I can be.

  • 1 package of the pre-peeled and cubed butternut squash from Trader Joes (I am obsessed with TJ and lazy, perfect combo).
  • 1 tbsp. of olive oil
  • 1 tbsp. of the maple syrup
  • 1/2 tsp. of cinnamon
  • 1/4 tsp. of cayenne (although I did equal parts of cinnamon & cayenne, since I like the heat)
  • 1 tsp. of course sea salt
  • Optional: 2 tbsp. low fat sour cream & 1 tsp. chopped fresh chives.

Set the oven at 400 degrees and toss the ingredients with the squash. Spread out on baking sheet and cook for 20-30 minutes. I do the fork test and prick the larger piece to check for done-ness. If it slides out and the squash is soft, you can shut off the oven & let it cool. I also serve this with a dollop of cold low fat sour cream which I sprinkle with chopped chives. I adore the yummy mild onion flavor it adds to the dish. Plus any potato chip lover knows that sour cream can’t breath without onion/chives.

So the best thing I have been hearing from people is that Jess and Sonia have the same voice. No one can differentiate who writes what post, because we have the same sense of humor, writing style, cooking/recipe style. Let me fill you in on a little secret, that was kind of the point & reasoning behind our fab collabo. Anyway, instead of keeping up the cryptic façade of who is writing this post, I will have to go ahead and spill the beans. Only because Jess is obsessed with all things TRUFFLE (you name it: fries, mac & cheese, mashed potatoes, popcorn-check out her recipe, it is DIVINE). Having said that, she has now gotten me on the truffle bandwagon. I, too, am now OBSESSED. So in honor of Jess and missing our last face time date, I wanted to share this recipe with y’all.

•Kosher or Sea salt (something course).
•1/2 cup heavy cream (I tried to lighten this up and did half & half, I mean can you blame a girl: butter, cheese, cream. It was getting a lil cray even for my fattie/foodie side).
•3 ounces white truffle butter (should be about $7, I bought a 4 oz package for $7.99. Yes its expensive, yes its different, you tell us worth it or not. Also if you aren’t a fan of truffle butter or have skeptics coming to dinner perhaps use 2 oz. It’s a strong flavor so no one will hate you for cutting back, I stuck with 3 though because its “damn delish”).
•Freshly ground black pepper
•1 (8.82-ounce) package tagliatelle dried pasta (or any other egg fettuccine, Trader joes has a cheap egg papardelle)
•3 tablespoons finely chopped fresh chives
•3 ounces Parmesan (shaved thin with a vegetable peeler or be lazy like me and have them shave it at the cheese counter for you).

Add 1 tablespoon salt to a large pot of water and bring to a boil & cook pasta.
Meanwhile, in a large (12-inch) saute pan, heat the cream over medium heat until it comes to a simmer. Add the truffle butter, 1 teaspoon salt, and 1/2 teaspoon pepper. Lower the heat to very low, and swirl the butter until it melts. Keep warm over very low heat. When the pasta is cooked, reserve 1/2 cup of the cooking water, then drain & add the pasta immediately (you don’t want the starchy noodles to clump together sitting in a side bowl, not that it happened to me, ok gawsh). Add the drained pasta to the saute pan and toss it with the truffle-cream mixture. As the pasta absorbs the sauce, add as much of the reserved cooking water, as necessary, to keep the pasta very creamy. (I added like 3 tbsp. not even). Serve the pasta & garnish each serving with a generous sprinkling of chives and shaved Parmesan. Serve immediately so the sauce doesn’t over-thicken. Also the original recipe says that this makes 2 portions, but let’s be honest here…this dish is DECADENT! So I’d say it is realistically a starter course or side dish for 4 servings. Yup that’s it, can’t believe how quick such a fancy dish can be? Well, make it and find out for yourself. Make sure to comment below on your thoughts! Mashed potatoes done right.

Thanksgiving is exactly 2 weeks away. Don’t act like you forgot. We have FALL everywhere. Notice the red Starbucks’ holiday cups? I know you did. What you may not have noticed is that you need to figure out this food gig for the holiday completely centered around eating. Talk about foodies rejoicing. Anyway, its an overwhelming meal and if you don’t have a game plan, this is an easy way to start. Check out the cranberry sauce recipe too, we are all about hooking you up for the big Turkey day.

  • 1.5 lb. of red skin potatoes
  • 1/2 cup of half & half
  • 2 tbsp. of minced garlic (again I do 3 but I’m a gahhhlliccc addict, nice faux Bahston accent, right?)
  • 2 tbsp. of chopped chives
  • 3 tbsp. of butter
  • Salt & black pepper to taste

Boil potatoes (skin on because I’m lazy, if you hadn’t noticed through most of these quick/easy recipes). While those are cooking, in a separate sauce pan bring the half & half to a boil with the chives, garlic, salt & pepper. Cut the heat immediately once the milk bubbles, we are just trying to heat through not boil or cook.

Drain the potatoes & mash with the butter. (You will notice that the skins just slide off and its edible and it won’t take away from the dish. BUT if you are a hard working home cook then feel free to take the time to peel them prior to boiling). Once thoroughly mashed, add the half & half mixture and whip/stir. This will make the mashed potatoes fluffy and melt in your mouth yum! Plus the chives & garlic will be infused evenly.
